Today would have been my Grandma Cora’s birthday so I wanted to share her favorite cookie recipe as a tribute to her. She was born on September 23, 1904. Her family were Amish when she was little and then later Amish Mennonites. Eventually all became Mennonites. She had a strict upbringing and was taught to work hard. She was a woman of many hats. She could work on the farm and would milk the cows. Grandma Cora was also a baker and seamstress. Her sewing was exquisite and she made many clothes to donate to the needy.
My grandpa and grandma were married in 1924. They had 5 daughters and one son. My father was the only son. My mother still lives on the farm where my dad lived from age 3 until his death in 2015. So we enjoyed the privileges of living on a dairy farm with our grandmother in one house and us in another. My grandpa had died at age 61. My grandma lived until age 90. I would never trade my growing up years for anything. My grandma taught me so much.
Before her passing she wrote an autobiography which included letters between my grandpa and her before they were married. It is filled with photos and stories. Now the 5th generation (my granddaughter) is reading her autobiography and is fascinated with the book. So today Miss H decided she would make the Applesauce Cookies from the book. Grandma Cora had some favorite recipes that she would share at gatherings and these cookies were ones I remember well. They are a little like a muffin or cake. They are soft and very good.
